Happy Birthday Jessica!!

For Jessica's birthday Bobby planned a dinner at Rosa's.....  we had so much fun celebrating her, and eating all kinds of good food....  :)  There's nothing better than dinner on the patio, with lots and lots of friends.....  ;)
Happy Birthday to one of the best friends God has truly blessed me with!!  :)
Ok, this picture really and truly cracks me up.....  we were all saying our hello's and I just happened to turn around and noticed that the boys had gotten themselves set up at the table with some chips, salsa, and drinks...  haha!!  somehow though, I wasn't surprised!!  ;)
Hanging out with Debran and baby Wade...  :)
The birthday girl and baby Owen.....  isn't he so cute!!  :)
ahhhhh....  Brody was just taking in the scene with me!!  :)

Time for a group shot!!  :)  smile everyone!!
Yay!!  we were so excited that Jaime finally got to attend an "event"!
The biggest and yummiest birthday cake I've ever seen....  haha!!  There's no doubt that Rosa's has one of the best carrot cakes around, and we all enjoyed a healthy serving of it!!  :)
Yep.....  we ALL enjoyed the cake....  some of us more than others....  ;)  haha!!  I LOVE this kid...  he sure does crack me up!!  :)

movie at the park

On Jessica's actual birthday there was a movie playing at the park....  everyone else had already planned to go, and I got to join them, UP was going to be playing, it's one of my favorites...  we had a great time talking, and the kids and I had a good time racing up and down the hill....  I LOVE the fact that I can play with them for a while, and then I get to give them back!!  ;)  hahaha!!  Amaria needs her sleep....  ;)  Jaime and I talked about bringing cupcakes for Jessica's b-day...  The kids wanted one SO bad it wasn't even funny....  haha!!
I LOVE how Jakey Jake is  looking at them, like he's going to get them...  by this point I had lost my battle in trying to save them...  haha!!  I think either Brody or Brandt had sat on them, and now Jake wanted a piece of them too!!  lol
Brandt showing Jake which one HE wanted!!

Then Ella and Luke arrived and we went RUNNING up the hill....  we had so much fun!!  haha!  but a couple of times up and back down and I was one tired person....  get me to some pizza please!!  ;)
Dinner/pizza time....  Lukey Luke was ready!  ;) it was such a nice night, so sitting around talking, eating and hanging out with friends was perfect!  :)
Me....  :)
Me and Jaime....  I just love the fact that she's back from New York...  I sure did miss her, and I am super excited that her, Chris, and the kids are here with us now!!  :)
Mr. Brody.....  waiting patiently for the movie???  maybe??  ;)  or maybe he was excited for his 2nd cupcake??  I know I was....  :)
Ready for the movie to start
haha!!!  I love this picture....  she LOVES her brother!!  ;)
watching the movie with 2 of my favorite little people...  this was right after Ella dumped the popcorn we were sharing, all over me...  haha!!  oh well we ate it anyway....  :)
Yay!  for summer movie nights at the park....  too bad this one was the last one....  I can't wait to do more of these next year!!  :)

Mazatlan style enchiladas..... Yummmmm!!!!

For Jessica's Birthday I decided to make her lunch to celebrate...  I made these tasty Mazatlan style green enchiladas that or friend Janet had made for us once before....  I may of cooked them  little too long, but they turned out good anyway!!  Who doesn't like a little extra crispy tortilla anyway, huh??  ;)

I started by "cooking" the pasilla pepper , this givesi it a little bit more flavor, next time I think I'll plan ahead and make it in the oven, I think it may be easier that way!  :)
then it was time to cut the pepper in half and remove the seeds, I don't do spicy so wash and remove is what i did!
then it was time to shred the chicken.....  and yes I separatly cooked some chicken breasts and shredded them, i think that if I'm short on time next time I may try to get one of those already cooked rotisserie chickens and shred that instead, but we'll see....  I think I may like the cooked chicken breasts myself..  ;)
then it was time to mix all of the ingredients together and make the sauce....  yummmmm....
then it was time to spread put it all together!!  :)  first I had to spread the sauce on the bottom of the dish

then it was time to roll and place...  :)
ummmmmm......  and after a little time in the oven they were done!!  :)
I think next time I will skip the kraft cheese slices on top though!
and we sered it with a spinach, tomato, cucumber salad with el torito cilantro dressing, and strawberries on the side!!
and I can't forget the banana cream pie for dessert!!  :)  and there yo have it, a tasty birthday lunch!!  :)  the enchilada recipe follows!! :)
Mazatlan inspired enchiladas

2-3 poblano chiles, depending on how "spicy" you want it to be, I used 2
1 Cup of sour cream
1 can of Nestle's Media Crema (fond in the hispanic isle)
a bunch of cilantro
1 Tablespoon of Knorr seasoning
2 or 3 chicken breasts, cooked and shredded
1 package of flour tortillas

Mix:  all of the ingredients except for the chicken and the tortillas, in the blender, I did the chilis, one at a time, and only half the cilantro at first, otherwise it's too much for the blender.
Spray:  a 9X13 dish with cooking spray
Spread:  a little sauce on the bottom, just enough to cover it
Fill:  each tortilla with the chicken filling and roll, setting them along the bottom of the container....
Pour:  the remaining sauce on top of the enchiladas
Bake:  for 45 minutes or until the sauce turns a bright green, at 350 degrees, when they're done, you can put a slice of kraft cheese on top of each enchilada....  I may skip this one next time!!  :)
ENJOY!!

Fun times with the girls....

It's always fun to get together with all of the dorm girls.... we try to do different things throught the year, but it's always difficult to get so many people together all at once,  almost everyone was there to celebrate Sheri's bridal shower though.... Jen made it our from Idaho, and Christy actually remembered the date for this event!  ;) it was fun times as always!! :)
The girlsand our prom pose!!  :)
Everyone at our table won a prize!  :)
Mindy, Jen and I had fun playing with the camera and taking pictures of ourselves!  haha
Me and Mindy!  we had a great time catching up, it had definitly been too long!
OBVIOUSLY, I thought something was VERY funny!!  haha!
Mindy, Jen and I with Sheri....  I love that Christy is telling an "animated" story in the background
Here's to a great afternoon spent with great friends.....  It was great seeing everyone too....  i LOVE when you can just pick up from the last time we all saw each other too....  makes the "catching up" easy to do!  ;)

sometimes.......

...... the answers to things we may have been thinking about present themselves to us, without us looking for them!!! i stumbled across this on my trip to Barnes and Noble last night.... (man I'd forgotten how much I love that place)!! And just like that, everything well ,most everything I've been "thoughtful" about appeared in one sheet of "wisdom"!!! ;) enjoy! and have a wonderful week!

Damn you Kohl's!!! ;)

hahaha!!! I used to be able to go into a store and ONLY pick up what I was going in for!! not so much anymore! I went into the store to buy a "prize" for a bridal shower I was helping with.... as soon as I walked in the door, my eyes fell on this here purse.... hahaha!!! Suddenly my mind wouldn't/couldn't think of anything else except for how cute this was, and how much I needed it!! haha!! i tried it on, took it's picture, walked around the store, and manuvered myself into a line so I could pay for it..... haha!! It wasn't until I got OUT of the store that I remembered what I had gone in there for in the first place!!! arghhhhh.... haha! so I had to make another pit stop somewhere else, dang it! ;) oh well, here's to my new cute red purse.... I just spent all morning organizing it too.... I do feel bad for my green one though, I LOVE her just as equally.... now what do I do?? I may just have to take turns!! :D
